Q&A with Sabato Sagaria, Chief Restaurant Officer of Union Square Hospitality Group

As Chief Restaurant Officer of Union Square Hospitality Group, Sabato Sagaria ensures that USHG’s award-winning restaurant teams have the strongest possible tools to achieve continuous operational improvement and growth in alignment with USHG’s vision and culture of Enlightened Hospitality. In 2012, Sabato became a member of the prestigious Court of Master Sommeliers, an enormous honor in wine and beverage expertise certification, held by under 200 individuals nation-wide. We are honored to have his as one of our Bottega Gran Fondo Team Leaders.
What kind of bike do you ride?
How often do you get to see your bike?
Since I moved to NYC in November my time in the saddle has greatly diminished. I have been doing spin classes a couple times a week but it is no substitute for the real thing. Once the summer time rolls around I hope to get back out there 2-3 times a week.
What’s one of your favorite rides?
Having lived in Aspen for six years I was lucky to have access to some amazing rides. My favorite was probably the ride up to Maroon Bells, which is one of the most picturesque rewards that I have encountered while cycling. Now that I’m in New York I’m really looking forward to exploring the city this summer from the saddle.
Can you share a crazy bike story for us?
One of my first times coming down from Maroon Bells I almost ran into a Moose. Good thing for both of us I was able to slow down in time and stop!
Tell us your favorite ride food?
I’m a fan of Honeystingers, which are delicious at any time of the day. Post ride: Apples and real Peanut butter are my favorite snack.
When did you become a cyclist?
I started riding in 2012. I passed the Master Sommelier exam and found all this extra time in my schedule since I was no longer studying. It was a great way for me to clear my mind, reflect on life, take in my beautiful surroundings, and get some exercise.
Did you have to give up riding when you were training for the Master Sommelier accreditation?
Physical fitness is one of the first things to be thrown out the window for most people while studying. Several months prior to the exam I realized how important exercise was to my mind set so I really began to reincorporate biking and yoga into my weekly routine and I don’t think I would have passed had I not! I love to bike because I love rewarding myself with great meals and great wines on a relatively frequent basis. Biking helps reduce the guilt factor that goes along with those and increase the frequency in which I can indulge.
What’s your go-to weekday wine?
I’m a fan of juicy lighter style wines. Beaujolais, Nero d’Avola, and Frappatto are perfect to warm to the soul and great on the couch with my feet up.
What’s are you most looking forward to at the Bottega Gran Fondo?
To ride, eat, and drink with like-minded people. Great friendships come from great times!
